Rice and Oil
- 2 cups cooked jasmine rice (preferably day-old and cold)
- 2 tbsp neutral oil (vegetable, canola, or avocado)
Egg Mixture
- 4 large eggs, beaten
Seasonings
- 1 green onion, finely chopped
- 2½ tbsp soy sauce
- ½ tbsp toasted sesame oil
Instructions
- Heat oil: Heat 1 tablespoon of neutral oil in a wok or large skillet over high heat until hot and shimmering to prepare for stir-frying.
- Cook eggs: Pour in the beaten eggs and stir quickly with a spatula until just set but still moist. Push the eggs to one side of the pan to keep them warm.
- Add rice: Add the remaining 1 tablespoon of oil along with the cold cooked jasmine rice. Break up any clumps with your spatula and stir-fry the rice together with the eggs for 1 to 2 minutes to warm through and combine flavors.
- Sauté green onion: Push the rice and eggs to the side, then add the finely chopped green onion to the empty space in the pan. Sauté briefly until fragrant, then mix the green onion in with the rice and eggs.
- Add sauces: Drizzle the soy sauce and toasted sesame oil around the edge of the pan so they sizzle on contact, then toss and stir everything together until well coated and heated through.
- Serve: Remove from heat and serve the egg fried rice immediately while hot and fresh.
