- 2 cups cabbage, finely shredded

- Salt and pepper, to taste

- 10 egg roll wrappers
- Vegetable oil, about 2 cups, for frying

- Prepare the Filling: In a large mixing bowl, combine shredded cabbage, grated carrots, finely chopped bell peppers, chopped green onions, minced garlic, soy sauce, sesame oil, and salt and pepper. Mix thoroughly to ensure all ingredients are well incorporated and seasoned.
- Assemble the Egg Rolls: Lay out one egg roll wrapper on a clean surface. Place about 2 tablespoons of the prepared vegetable filling in the center of the wrapper. Fold in the sides and roll tightly to enclose the filling securely, sealing the edges to prevent filling from escaping during frying.
- Heat the Oil: Pour vegetable oil into a skillet to a depth sufficient for shallow frying and heat over medium heat until the oil reaches about 350°F (175°C) or is hot enough for frying.
- Fry the Egg Rolls: Carefully place the assembled egg rolls into the hot oil, frying them for 3 to 4 minutes on each side. Fry until the wrappers turn a golden brown color and become crispy. Use tongs to turn them gently to ensure even cooking on all sides.
- Drain and Serve: Remove the fried egg rolls from the oil and place them on a paper towel-lined plate to absorb excess oil. Allow them to cool slightly before serving warm.
