Description

These Easy No-Bake Peanut Butter Oat Cups with a Chocolate Topping are a delicious and healthy snack option. Made with simple ingredients like rolled oats, peanut butter, honey, and topped with a smooth chocolate layer, these oat cups are quick to prepare without any baking required. Perfect for a grab-and-go treat or a sweet bite that satisfies cravings while providing wholesome nourishment.

Ingredients

Scale

Oat Cups

  • 1 cup old-fashioned rolled oats
  • 1/2 cup creamy peanut butter (or crunchy for extra texture)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Chocolate Topping

  • 1/2 cup chocolate chips (semi-sweet or milk chocolate)
  • 1 tablespoon coconut oil (or butter)

Instructions

  1. Prepare the Oat Mixture: In a medium bowl, combine peanut butter, honey (or maple syrup), vanilla extract, and salt. Stir until smooth and well combined. Then add the rolled oats and mix until all oats are evenly coated with the mixture.
  2. Form the Cups: Line a muffin tin with cupcake liners. Divide the oat mixture evenly among the muffin cups, using about 1-2 tablespoons per cup. Press down gently to compact the mixture into the bottom of each liner. Place the muffin tin in the fridge to chill and firm up for 10 to 15 minutes.
  3. Make the Chocolate Topping: In a small microwave-safe bowl, melt the chocolate chips and coconut oil together in 20-30 second intervals, stirring between each until smooth and fully melted.
  4. Top the Oat Cups: Remove the chilled oat cups from the fridge. Spoon the melted chocolate over each oat cup and spread it evenly using the back of a spoon.
  5. Chill and Set: Return the muffin tin to the fridge and allow the chocolate topping to harden and the oat cups to fully set. Chill for at least 30 minutes.
  6. Serve and Enjoy: Once set, remove the peanut butter oat cups from the muffin tin and enjoy immediately or store them in the fridge for up to a week.

Notes

  • Use crunchy peanut butter for added texture if desired.
  • Maple syrup is a great vegan alternative to honey.
  • Use dairy-free chocolate chips and substitute coconut oil with vegan butter to make this fully vegan.
  • Store oat cups in an airtight container in the refrigerator for up to 7 days.
  • Press the oat mixture firmly into the liners to prevent crumbling when serving.
