  • 8 cups water, divided

  • Ice, for serving

Instructions

  1. Prepare the Peach Syrup: In a medium saucepan, combine the sliced peaches and granulated sugar. Stir gently to coat the peaches with sugar.

  3. Simmer the Mixture: Place the saucepan on medium heat and bring it to a gentle simmer, stirring occasionally to prevent burning.
  4. Cook until Soft: Continue simmering for 10-15 minutes until peaches become very soft and mashable, and the mixture thickens slightly into a syrup.
  5. Mash the Peaches: Use a potato masher or the back of a spoon to gently mash the peaches in the saucepan to release more flavor.
  6. Strain the Syrup: Pour the peach mixture through a fine-mesh sieve into a heat-proof bowl, pressing down the solids to extract as much syrup as possible. Discard or save the solids for another use.
  7. Cool the Syrup: Let the peach syrup cool completely before using, then store it refrigerated in an airtight container for up to one week.
  8. Boil Water for Tea: Bring 4 cups of water to a boil in a kettle or saucepan.
  9. Brew the Tea: Place tea bags or loose leaf tea in a tea infuser into a heat-proof pitcher or teapot. Pour the boiling water over and steep for 3-5 minutes to desired strength.
  10. Remove Tea Bags: Remove tea bags or infuser, gently squeezing tea bags to extract flavor.
