Ingredients
Scale
Meat and Seasoning
- 1 pound ground beef
- 1 ounce taco seasoning
Vegetables and Beans
- 15 ounces canned corn (do not drain)
- 15 ounces canned kidney beans (do not drain)
- 29 ounces stewed tomatoes
- 15 ounces tomato sauce
Liquids
- 1 cup water
Instructions
- Brown the Ground Beef: Heat a large pot over medium heat and add the ground beef. Cook until browned, breaking it apart with a spoon, then drain any excess fat to keep the soup lighter.
- Add Ingredients: To the pot with the browned beef, add the taco seasoning, canned corn (with liquid), kidney beans (with liquid), stewed tomatoes, tomato sauce, and water. Stir everything together thoroughly.
- Bring to a Simmer: Place the pot back on the stove over medium heat and bring the mixture up to a gentle simmer, stirring occasionally to combine the flavors.
- Simmer Thoroughly: Allow the soup to simmer gently for about 20 minutes until heated through and the flavors have melded beautifully.
- Serve: Ladle the hot taco soup into bowls and garnish with your favorite toppings such as shredded cheese, chopped cilantro, sour cream, or sliced jalapeños for extra flavor and texture.
Notes
- You can substitute ground turkey or chicken for a leaner protein option.
- Add a diced onion or bell peppers during browning for extra flavor and veggies.
- Adjust the water amount to achieve your desired soup thickness.
- This soup freezes well—cool completely and store in airtight containers for up to 3 months.
- To make it spicier, add chopped jalapeños or a dash of hot sauce while simmering.
