Description

  • ½ cup chopped red onion

  • 6 (9-inch) whole wheat tortillas
  • 1 ¼ cups shredded reduced-fat sharp Cheddar cheese

Instructions

  1. Heat the Olive Oil and Cook Vegetables: In a skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the chopped red bell pepper, zucchini, yellow squash, red onion, and mushrooms. Sauté for about 7 minutes until the vegetables are tender and slightly caramelized.
  2. Transfer Vegetables to a Bowl: Remove the cooked vegetables from the skillet and place them in a bowl to cool slightly and set aside.
  3. Prepare the Quesadilla in Skillet: Lightly coat the same skillet with cooking spray. Place one whole wheat tortilla in the skillet over medium heat. Sprinkle half of the tortilla evenly with shredded reduced-fat sharp Cheddar cheese, then add a generous portion of the cooked vegetables on top. Sprinkle more cheese over the vegetables and then place a second tortilla on top to form a sandwich.
  4. Cook Until Golden and Crispy: Cook the quesadilla in the skillet for 2 to 3 minutes on each side, or until the tortillas are golden brown and crispy and the cheese is melted inside. Use a spatula to flip carefully to avoid spilling the filling.
  5. Serve Warm: Remove the quesadilla from the skillet and place it on a cutting board. Cut into 8 triangles and serve immediately while warm and cheesy.
