- 2 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 1/4 cup soy sauce
- 2 tbsp gochujang (Korean chili paste) or sriracha
- 6 cups chicken broth
For the soup:
- 1 cup shredded cooked chicken
- 2 packs ramen noodles (discard seasoning)
- 1 cup sliced mushrooms
- 1 cup baby spinach
- 2 green onions, sliced
- 2 soft-boiled eggs, halved
- Sesame seeds for garnish
Instructions
- Saute Aromatics: In a large pot over medium heat, heat sesame oil. Add garlic and ginger, cooking for 1 minute until fragrant.
- Add Broth and Flavors: Stir in soy sauce and gochujang, then pour in chicken broth. Bring to a simmer and cook for 5 minutes.
- Incorporate Chicken and Vegetables: Add shredded chicken and mushrooms, simmering for another 5 minutes. Add ramen noodles and cook for 2–3 minutes until tender.
- Finish and Serve: Stir in spinach until wilted. Divide noodles and broth into bowls, top with green onions, soft-boiled eggs, and a sprinkle of sesame seeds. Serve hot.

- For extra heat, add chili oil or crushed red pepper flakes to the broth.
