  • 2 cloves garlic, minced

  • 6 cups chicken broth

For the soup:

  • 1 cup shredded cooked chicken
  • 2 packs ramen noodles (discard seasoning)
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 2 green onions, sliced
  • 2 soft-boiled eggs, halved
  • Sesame seeds for garnish

Instructions

  1. Saute Aromatics: In a large pot over medium heat, heat sesame oil. Add garlic and ginger, cooking for 1 minute until fragrant.
  2. Add Broth and Flavors: Stir in soy sauce and gochujang, then pour in chicken broth. Bring to a simmer and cook for 5 minutes.
  3. Incorporate Chicken and Vegetables: Add shredded chicken and mushrooms, simmering for another 5 minutes. Add ramen noodles and cook for 2–3 minutes until tender.
  4. Finish and Serve: Stir in spinach until wilted. Divide noodles and broth into bowls, top with green onions, soft-boiled eggs, and a sprinkle of sesame seeds. Serve hot.
