- 1 tablespoon olive oil
- 1 medium yellow onion, finely chopped
- 2 medium carrots, peeled and sliced
- 2 medium Yukon Gold potatoes, peeled and diced
- 4 cups fish or vegetable broth
- 1 pound fresh salmon fillet, skin removed and cut into bite size chunks
- 1 cup heavy cream
- 1 bay leaf
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 1/2 teaspoon allspice
- 1 tablespoon fresh lemon juice
- 1/4 cup fresh dill, finely chopped
Instructions
- Sauté Aromatics: Melt the butter with the olive oil in a large pot over medium heat. Add the chopped onion and cook for about 4 minutes until softened and translucent.
- Add Vegetables: Stir in the sliced carrots and diced potatoes into the pot and cook for another 3 minutes to slightly soften the vegetables.
- Simmer Broth: Pour in the fish or vegetable broth, then add the bay leaf, salt, black pepper, and allspice. Bring the soup to a gentle boil, then reduce heat and let it simmer for about 12 to 15 minutes until the potatoes are tender.
- Cook Salmon: Add the salmon pieces to the pot and cook gently for 4 to 5 minutes until the fish is just cooked through and tender.
- Finish Soup: Stir in the heavy cream and fresh lemon juice, warming the soup through for another 2 minutes without letting it boil. Remove the bay leaf.
- Add Dill and Serve: Stir in the finely chopped fresh dill just before serving to infuse the soup with its bright herbal flavor. Serve hot.
Notes
- Traditional Lohikeitto is best made with fresh salmon and fresh dill for authentic flavor.
- Yukon Gold potatoes give the soup a creamy texture; other waxy potatoes can also be used.
- Avoid boiling the soup after adding cream to prevent it from curdling.
