Instructions
- Heat Oil: Heat canola oil in a heavy pot to 360°F (180°C), ensuring it is hot enough for frying to achieve a crispy crust without absorbing excess oil.
- Prepare Egg Yolks: Cut the hard-boiled eggs in half and carefully remove the yolks. In a bowl, mash the yolks with mayonnaise, finely chopped dill pickle relish, Dijon mustard, freshly ground black pepper, and 1/2 teaspoon of kosher salt until smooth and creamy. Set this yolk mixture aside.
- Bread the Egg Whites: Dredge the hollowed egg whites first in all-purpose flour, making sure each piece is lightly coated. Then dip them into the beaten eggs, and finally coat them evenly in a mixture of panko bread crumbs, grated Parmesan cheese, garlic powder, cayenne pepper, and the remaining 1/4 teaspoon kosher salt.
