Instructions
- Soak the Beans: Place 2 cups of pinto beans in a large bowl and cover them with water. Let them soak overnight to soften and reduce cooking time.
- Rinse the Beans: Drain the soaked beans and rinse thoroughly under cold water to remove any impurities.
- Cook Bacon: In a large pot over medium heat, cook the chopped bacon until it becomes crispy, rendering out its fat for flavor.
- Sauté Aromatics and Meats: Add crumbled chorizo, diced onion, minced garlic, and diced jalapeño to the pot with bacon. Cook, stirring occasionally, until the vegetables soften and the chorizo is browned.
- Add Beans and Spices: Stir in the drained beans, cumin, chili powder, and salt to the pot, coating everything evenly with the seasonings.
- Add Water and Boil: Pour enough water over the ingredients to cover them by about 2 inches. Bring the mixture to a boil over high heat.
- Simmer Until Tender: Reduce the heat to low, cover the pot, and let the beans simmer gently for about 1.5 hours or until tender, stirring occasionally and adding water if necessary.
- Mash and Serve: Once beans are tender, mash them to your desired consistency directly in the pot using a potato masher or fork. Adjust seasoning if needed, then serve warm as a hearty side or main dish.
