Ingredients
Scale
Chicken
- 4 chicken breasts, about 2 pounds
- 1 teaspoon salt
- 1 teaspoon parsley
- 1 teaspoon oregano
- 1 teaspoon basil
- ½ teaspoon pepper
Sauce
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- ¼ cup chicken broth
- ¼ cup unsalted butter
- 1 small shallot, minced (about ¼ cup)
- 2 tablespoons minced garlic (5–6 cloves)
Instructions
- Prepare Chicken: Prepare the 4 chicken breasts by pounding them with a meat tenderizer until they are uniformly about 1.5 inches thick. This ensures even cooking and tender texture.
- Season Chicken: Mix the salt, parsley, oregano, basil, and pepper in a small bowl. Rub this dried herb mixture all over the chicken breasts to evenly season them.
- Sear Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts to the skillet and cook undisturbed for 4-5 minutes until a golden crust forms on the bottom. Flip the chicken and cook the other side to form a crust as well.
- Remove Chicken: Remove the seared chicken breasts from the skillet and set aside temporarily.
- Make Sauce: Add the white wine vinegar, chicken broth, unsalted butter, and minced shallot to the same skillet. Sauté until the shallot is tender, about 3-4 minutes. Then add the minced garlic and sauté for an additional 2-3 minutes to infuse the sauce with garlic flavor.
- Return Chicken to Pan: Reduce the heat to medium and place the chicken breasts back into the skillet. Coat each breast with the garlic butter sauce mixture, basting frequently. Continue cooking and basting until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), flipping after about 5 minutes to ensure even cooking.
- Serve: Remove the skillet from heat and serve the chicken breasts fresh, spooning extra garlic butter sauce over the top for added flavor and moisture.
Notes
- For best results, pound the chicken evenly to ensure uniform cooking.
- Use a meat thermometer to ensure chicken is fully cooked to avoid dryness or undercooking.
- White wine vinegar adds a subtle tang; you can substitute with lemon juice if preferred.
- Serve the chicken with steamed vegetables or a side of rice or mashed potatoes to complete the meal.
