Ingredients
Scale
Shrimp and Sauce
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 5 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/2 cup dry white wine or chicken broth
- 1 lemon, juiced and zested
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Zoodles and Garnish
- 4 medium zucchini, spiralized into noodles
- 1/4 cup fresh parsley, chopped
Instructions
- Heat and Sauté Garlic: Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add minced garlic and red pepper flakes and cook for about 30 seconds until fragrant, being careful not to burn the garlic.
- Cook Shrimp: Add shrimp to the skillet and season with salt and black pepper. Cook the shrimp for 1 to 2 minutes per side until they turn pink and opaque. Once cooked, remove shrimp from the skillet and set aside.
- Prepare Sauce: Pour in white wine or chicken broth to deglaze the pan, scraping up any browned bits on the bottom. Let it simmer for 2 to 3 minutes to reduce slightly. Stir in lemon juice, lemon zest, and the remaining 2 tablespoons of butter until the sauce becomes smooth and slightly thickened.
- Combine Shrimp and Sauce: Return the cooked shrimp to the skillet, tossing them to coat evenly with the garlic butter sauce.
- Cook Zoodles: Add the spiralized zucchini noodles to the skillet and cook for 2 to 3 minutes until they are just tender yet still slightly crisp, stirring gently to mix them with the sauce and shrimp.
- Serve: Remove the skillet from heat, sprinkle the dish with fresh chopped parsley, and serve immediately for the best flavor and texture.
Notes
- Be careful not to overcook the zucchini noodles to prevent them from becoming soggy as they release water.
- White wine can be substituted with chicken broth for a non-alcoholic option.
- Adjust the amount of red pepper flakes to add more heat according to your preference.
- For a richer flavor, sprinkle some freshly grated Parmesan cheese on top before serving.
