Instructions

  2. Roast Potatoes: Roast in the preheated oven for 25-30 minutes, stirring halfway through to ensure even cooking. Potatoes should be tender inside and crispy on the outside. Remove and set aside.
  3. Prepare & Season Steak: Let the steak sit at room temperature for 15-20 minutes, then thoroughly pat dry. Cut into 1-inch cubes. In a clean bowl, toss steak with olive oil, sea salt, black pepper, garlic powder, and onion powder until evenly coated.
  4. Prepare Garlic Butter Sauce: Melt the butter in a small saucepan over low heat. Add minced garlic and thyme leaves; gently simmer for 1-2 minutes until the garlic is fragrant but not browned. Remove from heat and stir in chopped fresh parsley. Set aside.
  5. Sear Steak Bites: Heat a large heavy-bottomed skillet (preferably cast iron) over medium-high heat with 1-2 teaspoons olive oil until hot and shimmering.
