- 6 tablespoons unsalted butter

- 2 sprigs fresh thyme, leaves stripped

Instructions
- Prepare & Season Potatoes: Preheat oven to 400°F (200°C) and line a large baking sheet. Wash, pat dry, and cut the potatoes into uniform 1-inch pieces. In a large bowl, toss potatoes with olive oil, sea salt, black pepper, paprika, cayenne pepper (optional), and chopped rosemary. Spread evenly in a single layer on the baking sheet.
- Roast Potatoes: Roast in the preheated oven for 25-30 minutes, stirring halfway through to ensure even cooking. Potatoes should be tender inside and crispy on the outside. Remove and set aside.
- Prepare & Season Steak: Let the steak sit at room temperature for 15-20 minutes, then thoroughly pat dry. Cut into 1-inch cubes. In a clean bowl, toss steak with olive oil, sea salt, black pepper, garlic powder, and onion powder until evenly coated.
- Prepare Garlic Butter Sauce: Melt the butter in a small saucepan over low heat. Add minced garlic and thyme leaves; gently simmer for 1-2 minutes until the garlic is fragrant but not browned. Remove from heat and stir in chopped fresh parsley. Set aside.
- Sear Steak Bites: Heat a large heavy-bottomed skillet (preferably cast iron) over medium-high heat with 1-2 teaspoons olive oil until hot and shimmering. In batches (to avoid overcrowding), sear steak cubes for 1-2 minutes per side, forming a brown crust while cooking to desired doneness. Remove cooked steak bites to a clean bowl.
- Combine & Finish: Return all seared steak bites to the skillet. Add the roasted potatoes. Pour garlic butter sauce generously over the mixture. Toss gently over medium heat for 1-2 minutes to coat everything evenly and meld flavors. Remove from heat.
