Description

A flavorful and hearty recipe for garlic herb roasted vegetables, featuring baby potatoes, carrots, and green beans tossed in a garlic and Italian seasoning blend, then roasted to crispy-tender perfection. This easy oven-baked dish is perfect as a side or a wholesome vegetarian option.

Ingredients

Scale

Vegetables

  • 1 lb baby potatoes (red or gold), halved
  • 1 cup baby carrots (or sliced regular carrots)
  • 1 cup fresh green beans, trimmed

Seasoning & Garnish

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy clean-up and to prevent sticking.
  2. Prepare Potatoes and Carrots: In a mixing bowl, toss the halved baby potatoes and baby carrots with 1 tablespoon of olive oil, minced garlic, dried Italian seasoning, smoked paprika, salt, and black pepper to evenly coat the vegetables with the flavorful seasoning.
  3. Roast Potatoes and Carrots: Spread the seasoned potatoes and carrots evenly on the prepared baking sheet. Roast them in the preheated oven for 25 minutes, flipping them halfway through the cooking time to ensure even browning and tenderness.
  4. Prepare Green Beans: While the potatoes and carrots are roasting, toss the trimmed green beans with the remaining 1 tablespoon of olive oil and a pinch of salt to lightly season them.
  5. Add Green Beans and Continue Roasting: After the initial 25 minutes, add the seasoned green beans to the baking sheet with the potatoes and carrots. Return to the oven and roast for an additional 10 to 15 minutes, or until all the vegetables are tender and have a slightly crispy texture.
  6. Garnish and Serve: Remove the baking sheet from the oven and garnish the roasted vegetables with freshly chopped parsley and, if desired, sprinkle with red pepper flakes for a bit of heat. Serve warm and enjoy this delicious, healthy side dish.

Notes

  • To make this recipe vegan and gluten-free, ensure your Italian seasoning blend does not contain any additives.
  • Red pepper flakes are optional and can be adjusted according to your heat preference.
  • For extra crispy vegetables, you can broil for 2-3 minutes at the end, watching carefully to prevent burning.
  • Feel free to substitute green beans with other fresh vegetables like asparagus or bell peppers.
  • This dish pairs well with grilled meats, roasted chicken, or as part of a vegetarian meal.
