  • 500 grams fresh gnocchi

Tomato Sauce

  • 500 grams ripe tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt, to taste

  • 1/2 cup fresh basil, chopped (plus extra for garnish)

Cheese Topping

  • 250 grams mozzarella cheese, shredded
  • 50 grams Parmesan cheese, grated


Instructions

  1. Preheat the oven: Set your oven to 200°C (400°F) and allow it to fully preheat to ensure even baking.
  2. Cook the gnocchi: Bring a large pot of salted water to a boil. Add the fresh gnocchi and cook according to package instructions, about 2-3 minutes, until they float to the surface. Drain and set aside.
  3. Prepare the tomato mixture: In a large mixing bowl, combine the chopped ripe tomatoes, minced garlic, olive oil, salt, and black pepper. Mix thoroughly to blend the flavors.
  4. Combine gnocchi and tomato sauce: Gently fold the cooked gnocchi into the tomato mixture. Add half of the chopped fresh basil and mix gently to combine.
  5. Assemble the bake: Transfer the gnocchi and tomato mixture into a baking dish. Evenly sprinkle the shredded mozzarella and grated Parmesan cheese over the top.
  6. Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is fully melted, bubbly, and golden brown.
