Scale
Pasta
- 3 cups dry elbow macaroni
Cheese Sauce
- 4 tablespoons salted butter
- 2 (370 mL/12 oz) cans evaporated milk
- 1/3 cup milk of choice
- 2 large eggs
- 1/4 teaspoon garlic salt
- 4 cups cheddar cheese, shredded
- 2 cups mozzarella cheese, shredded
- 1 teaspoon paprika
Instructions
- Cook Macaroni: Bring a large pot of salted water to a boil and cook the elbow macaroni until al dente, about 7-8 minutes. Drain well and immediately stir in the salted butter until melted and combined.
- Prepare Milk Mixture: In a bowl, whisk together evaporated milk, milk of choice, eggs, and garlic salt until smooth and well combined.
- Assemble the Dish: In a greased baking pan, layer the macaroni evenly. Sprinkle the shredded cheddar and mozzarella cheeses over the macaroni, then pour the milk and egg mixture evenly on top.
- Bake: Sprinkle the top with paprika for color and flavor. Bake in a preheated oven at 350°F (175°C) for 30-35 minutes or until the mac and cheese is golden brown on top and bubbling around the edges.
Notes
- Use freshly shredded cheese for the best melting and texture.
- You can substitute milk of choice with whole milk, skim milk, or any plant-based milk according to preference.
- Do not overcook the macaroni in the boiling stage to prevent mushy texture after baking.
- Allow the baked mac and cheese to rest for 5 minutes before serving to thicken and set.
