Ingredients
Scale
Avocados
- 3 ripe but firm avocados, halved and pitted
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Veggie Salsa
- 1 cup diced tomatoes
- 1/2 cup diced cucumber
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lime juice
- 1 teaspoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare the Grill: Preheat a grill or grill pan to medium heat to ensure it is hot enough for grilling the avocados properly without burning.
- Season and Oil Avocados: Brush the cut sides of the avocado halves evenly with olive oil, then sprinkle them with salt and black pepper to enhance their natural flavor and prevent sticking.
- Grill Avocados: Place the avocado halves cut-side down on the preheated grill. Cook for 3 to 5 minutes, or until you see grill marks and the avocado softens slightly, giving it a warm, smoky flavor.
- Make Veggie Salsa: While the avocados are grilling, combine diced tomatoes, cucumber, finely chopped red onion, chopped cilantro, lime juice, olive oil, salt, and black pepper in a bowl. Mix thoroughly to blend flavors.
- Assemble and Serve: Remove the grilled avocados from the grill and allow them to cool slightly. Spoon the prepared veggie salsa into the center of each avocado half. Serve immediately for the best flavor and texture.
Notes
- Choose avocados that are ripe but still firm to ensure they hold their shape while grilling.
- For a spicy twist, add diced jalapeños to the salsa.
- Crumbled feta cheese can be added on top for extra flavor.
