Ingredients
Scale
Chicken Marinade
- 2 tablespoons extra virgin olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 boneless, skinless chicken breasts
Vegetables
- 3 cups fresh broccoli florets
Creamy Garlic Sauce
- 2 tablespoons extra virgin olive oil
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt, to taste
- Black pepper, to taste
Optional Garnish
- Chopped fresh parsley
- Additional grated Parmesan cheese
Instructions
- Marinate the Chicken: In a bowl, combine 2 tablespoons of extra virgin olive oil, 1 teaspoon Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add the chicken breasts and make sure they are evenly coated with the marinade. Cover and let them marinate for at least 30 minutes to enhance the flavor.
- Steam the Broccoli: While the chicken is marinating, steam the broccoli florets until they are tender yet still bright green, about 5 to 7 minutes. Once cooked, set aside to keep warm.
- Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Grill each marinated chicken breast for about 6 to 7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the meat is cooked through. Remove the chicken from the grill and let it rest for a few minutes before slicing.
- Prepare the Creamy Garlic Sauce: In a saucepan over medium heat, add a drizzle of olive oil and sauté the minced garlic until it becomes fragrant, approximately 1 minute. Pour in the heavy cream and gently bring it to a simmer. Stir in the grated Parmesan cheese along with salt and pepper to taste. Continue stirring until the cheese has melted and the sauce thickens slightly.
- Assemble the Bowls: In serving bowls, layer the sliced grilled chicken and steamed broccoli. Drizzle generously with the creamy garlic sauce. For a more complete meal, you may add cooked rice or quinoa as a base.
- Garnish and Serve: Finish with a sprinkle of chopped fresh parsley or additional Parmesan cheese if desired. Serve the bowls warm and enjoy a flavorful, balanced meal.
Notes
- Marinating the chicken for longer than 30 minutes can increase flavor but avoid exceeding 2 hours to prevent texture changes.
- Steaming broccoli ensures nutrients and vibrant color are retained.
- Be sure the chicken reaches an internal temperature of 165°F (75°C) to ensure it is safely cooked.
- For a lighter sauce, substitute half-and-half for heavy cream, but sauce thickness may vary.
- Adding a grain like quinoa or rice creates a more filling, balanced bowl.
- Leftovers store well refrigerated for up to 3 days.
