- 1 lb cooked shrimp (peeled and deveined, tails removed)
- 1 large ripe avocado
- 1 tablespoon lime juice
- 1 small garlic clove (minced)
- 2 tablespoons finely chopped red onion
- 1 tablespoon chopped fresh cilantro
- Salt and pepper to taste
- 24 round tortilla chips or cucumber slices
- Optional red pepper flakes or jalapeño slices for garnish
Instructions
- In a medium bowl, mash the avocado with lime juice until smooth but slightly chunky. Stir in the minced garlic, red onion, cilantro, salt, and pepper. Taste and adjust seasoning as needed.
- Place a small spoonful of guacamole on each tortilla chip or cucumber slice. Top with one shrimp and garnish with a sprinkle of red pepper flakes or a thin slice of jalapeño if desired. Serve immediately.
Notes
- For extra flavor, toss the shrimp in a bit of olive oil, lime juice, and smoked paprika before assembling.
