Instructions
- Marinate the Chicken: In a large bowl, whisk together soy sauce, water, brown sugar, garlic, and ginger until the sugar is dissolved. Add the chicken thighs and marinate for at least 1 hour or overnight for best flavor.
- Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Remove chicken from the marinade and grill for 5–7 minutes per side until cooked through and slightly charred.
- Make the Glaze: While the chicken is grilling, pour the leftover marinade into a small saucepan and bring to a boil. For a thicker sauce, mix cornstarch with water and whisk into the boiling marinade. Simmer until slightly thickened.
- Finish and Serve: Brush the cooked chicken with the sauce or serve it on the side. Garnish with green onions and sesame seeds. Serve with rice or macaroni salad.

- Chicken thighs are preferred for their juiciness, but chicken breasts can be used if pounded thin.
