- 1 teaspoon Vanilla Extract
Chocolate Coating
- 1 cup Semi-sweet Chocolate Chips (Dark chocolate or dairy-free chips can be used)
- 1 tablespoon Coconut Oil (Butter can be used if coconut oil isn’t available)
Instructions
- Prepare the Yogurt Mixture: In a large bowl, gently mix together the chopped strawberries, Greek yogurt, honey, and vanilla extract until the mixture is smooth and fully combined.
- Form the Clusters: Using a spoon, portion out approximately 2 tablespoons of the yogurt mixture onto a baking sheet lined with parchment paper, shaping them into small clusters.
- Freeze the Clusters: Place the baking sheet in the freezer and let the clusters freeze for 1 to 2 hours, or until they are completely solid and firm.
- Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat in 15 to 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
- Dip the Yogurt Clusters: Remove the frozen clusters from the freezer and individually dip each one into the melted chocolate, fully coating them.
- Set the Chocolate: Place the chocolate-covered clusters back on the lined baking sheet and return them to the freezer for an additional 5 to 10 minutes to allow the chocolate to harden.
- Serve and Store: Once set, enjoy immediately or store the clusters in an airtight container in the freezer to maintain their texture and freshness.
