- Blend spinach and water: Place the chopped fresh spinach and water into a blender, and blend until you achieve a smooth, vibrant green liquid mixture.
- Mix dry ingredients: In a large mixing bowl, combine the gluten-free flour and salt, stirring to evenly distribute the salt.
- Combine spinach mixture and olive oil with flour: Pour the blended spinach mixture and olive oil into the bowl with the flour and salt.
- Knead the dough: Mix everything thoroughly, then knead the dough by hand until it forms a smooth and cohesive dough ball, soft but not sticky.
- Portion the dough: Divide the dough evenly into approximately 6 small balls, depending on the desired size of your tortillas.
- Roll out tortillas: Using a rolling pin, flatten each dough ball into a thin, round tortilla shape on a lightly floured surface.
- Cook tortillas on skillet: Heat a non-stick skillet or cast-iron pan over medium heat. Cook each tortilla for about 2-3 minutes on one side until light golden spots appear, then flip and cook the other side for another 2-3 minutes. Remove and keep warm.
