  • 4 tilapia fillets
  • 2 tablespoons olive oil (divided)
  • 1/2 cup breadcrumbs

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Roasted Vegetables:

  • 1 zucchini (sliced)
  • 1 red bell pepper (chopped)
  • 1 yellow squash (sliced)
  • 1 red onion (cut into wedges)
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare vegetables: Toss zucchini, bell pepper, yellow squash, and red onion with 1 tablespoon olive oil and Italian seasoning. Spread on one side of the baking sheet.
  3. Coat tilapia: Combine breadcrumbs, Parmesan cheese, basil, parsley, garlic powder, salt, and pepper. Brush tilapia fillets with remaining olive oil, coat with breadcrumb mixture, and place on the baking sheet.
  4. Bake: Bake for 15–18 minutes until tilapia is golden and flakes easily and vegetables are tender.
