Meat and Vegetables
- 1 pound ground beef
- 1 small onion, diced
- 1 cup corn kernels (fresh, canned, or frozen)
Cheese
- 1 cup shredded cheddar cheese
Custard and Batter
- 2 large eggs
- 1/2 cup milk
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 2 tablespoons butter, melted
Spices and Seasonings
- 1/2 teaspoon salt (divided)
- 1/4 teaspoon black pepper (divided)
- 1/4 teaspoon paprika
Optional Garnish
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat the Oven: Preheat your oven to 375 degrees Fahrenheit and lightly grease a 9-inch pie dish to prepare for baking.
- Cook Beef and Onion: In a large skillet over medium heat, cook the ground beef and diced onion until the beef is fully browned and the onion is softened. Drain any excess fat from the skillet.
- Add Corn and Seasonings: Stir in the corn kernels along with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and paprika into the cooked beef mixture, mixing well to combine flavors.
- Prepare Batter: In a medium bowl, whisk together eggs, milk, flour, baking powder, and melted butter until you achieve a smooth batter.
- Combine Batter with Beef Mixture: Pour the egg batter over the beef and corn mixture in the skillet. Gently stir to evenly incorporate the batter without overmixing.
- Transfer to Pie Dish and Add Cheese: Pour the combined mixture into the greased pie dish and evenly distribute. Top the pie with shredded cheddar cheese evenly.
- Bake: Place the pie dish in the preheated oven and bake for 25 to 30 minutes, or until the top turns golden brown and the filling sets firmly.
- Garnish and Serve: Remove from the oven and allow to cool slightly. Garnish with chopped fresh parsley if desired before serving.
