Slowly and carefully pour the hot syrup in a thin stream into the beaten egg whites while continuing to beat on high speed to integrate them thoroughly and safely without cooking the egg whites prematurely.

Continue until the mixture thickens, loses its glossy sheen, and can hold its shape when dropped from a spoon—this process typically takes 5 to 7 minutes.
