- Add Flavor and Thicken: Add the vanilla extract to the mixture and keep beating. Continue until the mixture thickens, loses its glossy sheen, and can hold its shape when dropped from a spoon—this process typically takes 5 to 7 minutes. If desired, fold in the chopped pecans gently to distribute evenly.
