Potatoes:
- 1 1/2 lbs baby potatoes, halved
- 2 tbsp olive oil
- 1/2 tsp smoked paprika

Sausage:
- 1 lb smoked sausage, sliced into 1/2-inch pieces
- 1/4 cup honey
- 3 cloves garlic, minced
- 1 tbsp soy sauce
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley for garnish
Instructions
- Preheat oven: Preheat the oven to 400°F.
- Toss Potatoes: In a large bowl, toss halved potatoes with olive oil, salt, and smoked paprika. Spread onto a baking sheet and roast for 20 minutes.
- Prepare Honey Garlic Mixture: In a small bowl, whisk together honey, garlic, soy sauce, and black pepper.
- Add Sausage: Remove potatoes from the oven, add sausage pieces, and drizzle with honey garlic mixture. Toss to coat and spread evenly.
- Roast: Return to the oven and bake for an additional 20–25 minutes, stirring halfway, until potatoes are tender and sausage is caramelized.
- Garnish and Serve: Garnish with chopped fresh parsley before serving.
