Instructions
- Prepare the Sauce: Whisk together soy sauce, honey, and cornstarch in a bowl until the mixture is smooth and well combined. Set aside to allow the flavors to meld.
- Cook the Shrimp: Heat 1 teaspoon of olive oil in a large skillet over medium heat. Add the shrimp in a single layer and cook for about 2 minutes on each side until they turn pink and are just cooked through. Remove the shrimp with a slotted spoon and set aside.
- Sauté Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the chopped broccoli, sliced bell peppers, and snow peas, sautéing for 5-6 minutes until the vegetables are tender-crisp and slightly blistered.
- Add Aromatics and Shrimp: Stir in the minced garlic and cook for an additional 1 minute until fragrant. Return the cooked shrimp to the skillet and combine well with the vegetables.
- Finish with Sauce: Reduce the heat to low and pour the prepared sauce over the shrimp and vegetables. Stir continuously for about 10 seconds until the sauce thickens and evenly coats all ingredients.
- Garnish and Serve: Remove from heat and garnish the stir fry with sliced green onions. Serve immediately over steamed rice for a complete and satisfying meal.
