Description

A flavorful Indonesian fried rice dish featuring jasmine rice stir-fried with eggs, mixed vegetables, and a blend of soy sauces, served alongside savory grilled chicken or beef skewers. This quick and vibrant meal combines sweet, salty, and smoky flavors, perfect for a satisfying weeknight dinner.

Ingredients

Scale

Fried Rice

  • 2 cups cooked jasmine rice
  • 1 tablespoon vegetable oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 teaspoon sesame oil
  • Green onions, chopped, as needed

Grilled Skewers

  • Chicken or beef skewers, grilled (approximately 4 skewers for 4 servings)

Instructions

  1. Heat Oil: Heat the vegetable oil in a large pan or wok over medium heat to prepare for cooking the eggs and vegetables.
  2. Scramble Eggs: Add the beaten eggs to the pan and scramble until they are fully cooked but still tender. Remove the eggs from the pan and set aside.
  3. Stir-Fry Vegetables: Add the mixed vegetables to the same pan and stir-fry for 2 to 3 minutes until they are slightly tender but still crisp.
  4. Add Rice and Sauces: Add the cooked jasmine rice, soy sauce, sweet soy sauce (kecap manis), and sesame oil to the pan. Stir continuously to combine all ingredients evenly and heat the rice through.
  5. Combine Eggs and Green Onions: Fold the scrambled eggs and chopped green onions into the fried rice. Cook for an additional 2 minutes to blend flavors and warm everything thoroughly.
  6. Serve: Plate the Indonesian fried rice and top each serving with grilled chicken or beef skewers. Enjoy immediately.

Notes

  • Use day-old rice if possible for better texture in fried rice, as freshly cooked rice can be too soft and sticky.
  • Adjust soy sauce quantities to taste, especially if using salted or low-sodium soy sauce.
  • Grilled skewers can be customized with your preferred marinade or seasoning for added flavor.
  • For a vegetarian version, omit the skewers and add tofu or tempeh skewers instead.
  • Ensure vegetables are cooked but retain a slight crunch for best texture.
