Dry Ingredients:
- 2 cups all-purpose flour
- 3 tbsp granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Additional Ingredients:
- 3 tbsp cold unsalted butter, cut into small cubes
- 1/2 cup raisins or currants
- 3/4 cup buttermilk
- 1 large egg
- 1/2 tsp caraway seeds (optional)
Instructions
- Preheat the Oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Cut in Butter: Cut in the butter until the mixture resembles coarse crumbs.
- Add Additional Ingredients: Stir in raisins or currants (and caraway seeds if using).
- Combine Wet and Dry Ingredients: In a small bowl, whisk together buttermilk and egg. Add the wet mixture to the dry ingredients and stir until just combined.
- Knead and Shape: Turn the dough onto a floured surface, knead lightly, pat into a circle, and cut into wedges.
- Bake: Place wedges on the baking sheet and bake for 18–22 minutes until golden brown.
- Cool and Serve: Cool slightly before serving.
Notes
- Best served warm with butter and jam.
- For a sweeter variation, brush tops with cream and sugar before baking.
- Freeze well—reheat in a warm oven before serving.
