Coconut Filling
- 2 cups unsweetened shredded or flaked coconut
- 1/4 cup coconut oil (solid or melted)
- 1/4 cup pure maple syrup (can substitute with agave nectar)
Chocolate Coating and Decoration
- 1 cup vegan chocolate chips (can substitute with dark chocolate or carob chips)
- 1 tablespoon coconut oil (extra, for melting with chocolate)
Instructions
- Prepare the Pan: Line a standard 12-cup muffin pan with cupcake liners to prevent sticking and make the treats easy to remove.
- Blend the Ingredients: In a food processor, combine the unsweetened shredded coconut, coconut oil, and pure maple syrup. Blend until the mixture forms a sticky, dough-like consistency that holds together when pressed.
- Fill Muffin Cups: Evenly scoop the coconut mixture into each muffin liner, pressing down firmly to compact the mixture. Place the pan in the freezer for 10-15 minutes until the coconut cups firm up.
- Make the Chocolate Dip: In a microwave-safe bowl, melt the vegan chocolate chips together with an extra tablespoon of coconut oil. Stir until smooth and glossy.
- Dip the Cups: Once the coconut cups are firm, carefully dip the bottom of each cup into the melted chocolate to coat the base. Return the dipped cups to the freezer for another 10 minutes to allow the chocolate to harden.
- Decorate: Melt additional chocolate chips and use a piping bag or a small plastic bag with a cut tip to pipe Jack Skellington’s iconic facial features onto the top of each cup. Allow the decorations to set before serving.
