Description

Jimmy Buffett Pasta Salad is a vibrant and creamy dish perfect for summer gatherings, combining rotini pasta, fresh vegetables, cheddar cheese, and bacon, all tossed in a zesty ranch lime dressing. This flavorful salad is easy to prepare and ideal for picnics or as a satisfying main course.

Ingredients

Scale

Pasta and Vegetables

  • 12 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup canned corn, drained
  • 1 cup black beans, rinsed and drained
  • 4 green onions, sliced
  • 1/4 cup chopped fresh cilantro

Other Ingredients

  • 1 cup shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 1 cup ranch dressing
  • 2 tablespoons fresh lime juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the rotini pasta according to the package directions until al dente. Drain and rinse the pasta under cold water to stop the cooking process and cool it down.
  2. Combine Salad Ingredients: In a large mixing bowl, add the cooled pasta, halved cherry tomatoes, shredded cheddar cheese, crumbled cooked bacon, drained canned corn, rinsed black beans, sliced green onions, and chopped fresh cilantro. Mix gently to combine.
  3. Prepare the Dressing: In a small bowl, whisk together the ranch dressing, fresh lime juice, garlic powder, salt, and black pepper until smooth and well blended.
  4. Toss the Salad: Pour the dressing over the pasta and vegetable mixture. Toss everything together carefully until the salad is evenly coated with the dressing.
  5. Chill and Serve: Cover the salad and chill it in the refrigerator for at least 1 hour to allow the flavors to meld. Before serving, give the salad a final stir and adjust seasoning if needed.

Notes

  • You can substitute the ranch dressing with a creamy avocado dressing for a different flavor profile.
  • Add diced avocado just before serving to keep it fresh and creamy.
  • For extra smoky flavor, grill the corn before adding it to the salad.
