- 2 pounds extra-lean ground beef
- 1 medium onion, finely chopped (about 6 ounces)
- 2 teaspoons Diamond Crystal kosher salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh garlic, minced
- 1/4 cup mayonnaise
- 1/4 cup unsweetened ketchup
- 1 tablespoon mustard
- 1 1/2 cups sharp cheddar cheese, shredded and divided (about 6 ounces total)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 400°F (200°C). Spray a 2-quart baking dish with olive oil spray to prevent sticking.
- Cook Ground Beef and Onion: Heat the olive oil in a large skillet over medium-high heat for about 2 minutes. Add the ground beef and chopped onion. Cook, breaking up the meat with a spoon, until the beef is browned and the onions have softened, approximately 5 minutes.
- Drain Excess Liquid and Season: Carefully drain any liquid from the skillet, then return the beef and onion mixture to the pan. Stir in the kosher salt, black pepper, and minced garlic. Continue cooking for 1 more minute, stirring constantly to combine the flavors.
- Mix in Sauces and Cheese: Turn off the heat. Stir in the mayonnaise, unsweetened ketchup, mustard, and 1 cup of the shredded cheddar cheese until everything is evenly blended.
- Assemble the Casserole: Transfer the mixture to the prepared baking dish. Evenly sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
- Bake or Broil: Bake in the preheated oven for about 15 minutes until the cheese is melted and the casserole is heated through. Alternatively, if your baking dish is broiler-safe, you can broil it 6 inches beneath the broiler for 1–2 minutes until bubbly and golden. Serve hot.
Notes
- Diamond Crystal kosher salt is recommended for seasoning, but you can substitute with Morton kosher salt in a lesser amount (use about half the quantity).
- Draining excess liquid from the cooked beef helps prevent a watery casserole and ensures better texture.
- You can adjust the seasoning to taste, adding more or less salt or pepper as desired.
- If you prefer a stronger cheese flavor, sprinkle extra cheddar on top before baking.
