Scale
Main Ingredients
- 2 lbs chicken breasts
- 1 can (4 oz) diced green chilies
- 1 can (10 oz) green enchilada sauce
- 1 cup chicken broth
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1 cup shredded cheese (optional)
Instructions
- Prepare Ingredients: Gather and prepare all ingredients by chopping the onion and mincing the garlic. Open the cans of diced green chilies and green enchilada sauce.
- Add to Slow Cooker: Place the chicken breasts, diced green chilies, green enchilada sauce, chicken broth, chopped onion, minced garlic, cumin, chili powder, paprika, salt, and black pepper into the slow cooker. Stir slightly to combine.
- Cook Chicken: Cook the mixture on low for 6-8 hours or on high for 3-4 hours, until the chicken breasts are fully cooked and tender.
- Shred Chicken: Remove the cooked chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker.
- Add Cream and Cheese: Stir in the heavy cream and shredded cheese (if using) into the slow cooker. Cook for an additional 15 minutes to allow the soup to become creamy and well combined.
- Serve: Ladle the soup into bowls and serve hot. Optionally, garnish with fresh cilantro or avocado slices for extra flavor and texture.
Notes
- You can substitute chicken thighs for breasts if you prefer darker meat.
- For a spicier soup, add diced jalapeños or extra chili powder.
- The cheese is optional but adds a rich, creamy texture to the soup.
- Leftovers store well in the refrigerator for up to 3 days.
- This recipe is naturally low in carbs and fits well into a ketogenic diet.
