Ingredients
Scale
Meat and Vegetables
- 1 tablespoon olive oil
- 1 pound thinly sliced roast beef
- 1 medium green bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- 1 cup sliced mushrooms
Seasonings
- 1 teaspoon garlic powder
- Salt and pepper to taste
Cheese
- 8 slices provolone cheese
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the roll ups.
- Sauté vegetables: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sliced green bell pepper, onion, and mushrooms. Sauté for about 5 minutes until the vegetables begin to soften and release their flavors.
- Cook beef and season: Add the thinly sliced roast beef to the skillet with the veggies. Sprinkle garlic powder, salt, and pepper over the mixture. Stir and cook for another 3-5 minutes until the beef is heated through and the vegetables are tender.
- Assemble roll ups: Lay out the slices of provolone cheese on a flat surface. Distribute the beef and vegetable mixture evenly on top of each slice.
- Roll cheese and filling: Carefully roll each provolone slice tightly around the beef and vegetable filling. Place each roll seam-side down in a baking dish to prevent them from unrolling during baking.
- Bake: Place the baking dish in the preheated oven and bake for 10 minutes, or until the cheese has melted and is bubbly.
- Rest and serve: Remove the roll ups from the oven and let them sit for a few minutes to set before serving them warm.
Notes
- For best results, use thinly sliced roast beef to ensure even heating and easy rolling.
- You can customize the vegetables by adding other low-carb options like jalapeños or spinach.
- If you prefer a spicier kick, sprinkle some red pepper flakes in the beef mixture.
- Serve with a side salad or keto-friendly dip to complete your meal.
