- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 2 medium tomatoes, chopped
- 1 green chili, sliced (optional)
- 1 cup full-fat coconut milk
- 1 tablespoon tomato paste
- 1/2 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- Fresh cilantro for garnish
Instructions
- Marinate the Chicken: Combine chicken with yogurt, lemon juice, salt, and half of the curry powder. Marinate for at least 1 hour.
- Cook the Curry: Sauté onion until golden, then add garlic, ginger, and chili. Add tomatoes and tomato paste, then spices. Cook until fragrant. Brown the marinated chicken. Pour in coconut milk, cover, and simmer for 25-30 minutes.
- Finish and Serve: Season with salt and pepper. Garnish with cilantro before serving.
