Chicken Marinade

Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cup feta cheese, crumbled

  • 2 bell peppers, roasted


Instructions

  1. Marinate the chicken: In a bowl, combine the lemon juice, minced garlic, olive oil, salt, and pepper. Add the chicken breasts and coat thoroughly. Cover and let marinate for at least 30 minutes to allow the flavors to infuse.
  2. Grill the chicken: Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the grill and let rest briefly.
  3. Prepare the tzatziki: While the chicken cooks, mix the grated cucumber, Greek yogurt, crumbled feta, salt, and pepper in a bowl until well combined. Adjust seasoning to taste.
  4. Roast the bell peppers: Roast the bell peppers over an open flame or in the oven until their skins are charred and the peppers are soft. Once cooled, peel off the skins and slice into strips.
  5. Assemble the pitas: Slice the grilled chicken thinly. Warm the pita breads slightly, then fill each pita with sliced chicken, roasted bell peppers, and a generous spoonful of feta tzatziki. Serve immediately.
