Refreshing and creamy Lime Popsicles made with fresh lime juice, mint, avocado, and coconut cream, sweetened naturally with maple syrup and optionally enhanced with a splash of white rum. These dairy-free, vegan-friendly popsicles are perfect for a cooling summer treat and require no cooking—just blending and freezing.

- 2 tablespoons lime zest
- ½ cup lime juice (freshly squeezed, approx 5-6 limes)
- â…“ cup fresh mint leaves
- 1 large avocado

- 3.5 oz coconut yoghurt (or substitute with coconut cream/milk)
- 5 tablespoons pure maple syrup
- 7 oz coconut cream (or full fat canned coconut milk)
Optional
- 3 tablespoons white rum (optional)
Instructions
- Blend the ingredients: Add all of the ingredients except the coconut cream into a blender. Blend thoroughly until the mixture becomes smooth and creamy. Then add the coconut cream and blend once more until fully combined.
- Pour and freeze: Pour the blended mixture evenly into ice cream molds. Insert wooden sticks into each mold cavity. Place the molds in the freezer and allow them to freeze for at least 5 hours or until the popsicles are completely set.
- Unmold the popsicles: To easily remove the popsicles from their molds, run the molds under warm water for a few seconds. The popsicles will loosen and can be pushed out gently.
- Storage: Store the popsicles in an airtight container in the freezer. They will keep well for up to one month.
Notes
- For a non-alcoholic version, omit the white rum without affecting the taste or texture significantly.
- Using ripe avocado adds creaminess and healthy fats to the popsicles.
- If coconut yoghurt is unavailable, full-fat coconut milk or cream works as a great substitute.
- To enhance mint flavor, lightly bruise the mint leaves before blending.
- Ensure the popsicles are fully frozen before unmolding to prevent breakage.
