Ingredients
Scale
Vegetables
- 1 head cauliflower, cut into florets
- 2 green onions, thinly sliced (optional)
Dairy & Cheese
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons cream cheese
Seasonings & Oils
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
Optional Toppings
- 2 slices bacon, cooked and crumbled
Instructions
- Preheat Oven: Set your oven to 400 degrees Fahrenheit to prepare for roasting the cauliflower.
- Prepare Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper until they’re evenly coated, ensuring flavorful roasting.
- Roast Cauliflower: Spread the cauliflower in a single layer on a baking sheet. Roast for 20-25 minutes, stirring halfway through, until the florets are tender and have a light golden-brown color.
- Mix Cheese Blend: Meanwhile, in a separate bowl, combine shredded cheddar cheese, grated Parmesan, cream cheese, garlic powder, and smoked paprika. Mix thoroughly to blend flavors evenly.
- Assemble and Bake: Transfer the roasted cauliflower into a baking dish. Evenly sprinkle the cheese mixture over the top. Return the dish to the oven and bake for an additional 10 minutes, or until the cheese has melted fully and is bubbly and golden.
- Add Garnishes and Serve: Remove from the oven and top with sliced green onions and crumbled bacon if desired. Serve hot as a delicious low-carb side dish or a standalone main course.
Notes
- For a creamier texture, lightly steam the cauliflower before roasting to soften it further.
- You can substitute mozzarella cheese for cheddar to create a milder, less sharp flavor profile.
- This dish pairs wonderfully with grilled chicken or pork for a complete meal.
