Instructions

  1. Cook the sago pearls: In a pot, bring 4 cups of water to a rolling boil. Add the sago pearls and cook them, stirring occasionally, until they become translucent, about 10 to 15 minutes.
  2. Drain and rinse sago: Once cooked, drain the sago pearls using a fine mesh strainer and rinse them under cold water to halt the cooking process and prevent sticking.
  3. Prepare coconut milk mixture: In a mixing bowl, combine the full-fat coconut milk with granulated sugar. Stir well until the sugar is completely dissolved.
  4. Fold in sago and mango: Gently add the cooled sago pearls and diced mango into the coconut milk mixture, folding carefully to avoid mashing the mango pieces and sago.
  5. Chill and serve: Transfer the mixture into serving cups or bowls. Refrigerate for at least one hour to chill and allow the flavors to meld. Optional toppings such as fresh fruit or toasted coconut flakes can be added before serving for extra texture and flavor.
