Description

These Maple Walnut Goat Cheese Roasted Sweet Potatoes are a delightful combination of savory and sweet flavors, perfect for a comforting side dish or a festive addition to any meal. Roasted to perfection, the sweet potatoes are topped with crunchy walnuts, creamy goat cheese, and a drizzle of maple syrup.

Ingredients

Scale

Sweet Potatoes:

  • 2 large sweet potatoes, peeled and cut into 1/2-inch cubes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cinnamon (optional)

Additional Ingredients:

  • 1/3 cup chopped walnuts
  • 2 tablespoons pure maple syrup
  • 2 ounces goat cheese, crumbled
  • 1 tablespoon fresh thyme or rosemary, chopped (optional)
  • extra maple syrup for drizzling

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the sweet potatoes: In a large bowl, toss sweet potato cubes with olive oil, salt, pepper, and cinnamon if using. Spread evenly on the prepared baking sheet. Roast for 25–30 minutes, flipping halfway, until golden and tender.
  3. Add walnuts and maple syrup: During the last 5 minutes of roasting, sprinkle chopped walnuts over the sweet potatoes and drizzle with maple syrup. Return to oven to toast the nuts lightly.
  4. Finish and serve: Remove from the oven and transfer to a serving dish. Top with crumbled goat cheese and fresh herbs, if using. Drizzle with a touch more maple syrup just before serving.

Notes

  • For extra crunch, toast the walnuts separately in a dry skillet before adding.
  • You can swap goat cheese for feta or blue cheese depending on your preference.
  • This dish pairs beautifully with roasted chicken, pork, or holiday meals.
