- 1 cup Vegetable Broth
- 1 can Full-Fat Coconut Milk (shaken)
- ¼ cup Nutritional Yeast
- 2 cups Fresh Spinach
- Salt, to taste
- Black Pepper, to taste
- 1 tbsp All-Purpose Flour or Cornstarch (optional, for thickening sauce)
- ¼ cup Fresh Basil or Parsley (chopped, for garnish)
Instructions
- Press Tofu: Press your tofu for at least 30 minutes to remove excess moisture, ensuring it becomes firm enough to hold shape during cooking.
- Slice Tofu: Slice the pressed tofu into your preferred shape, such as 1-inch cubes, for even cooking and crisping.
- Coat Tofu (Optional): If a crispy texture is desired, toss the tofu cubes with cornstarch, salt, and black pepper until they are lightly coated.
- Cook Tofu on Stovetop: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the tofu cubes and cook for 4-6 minutes per side until golden brown and crisp. Remove tofu from the skillet and set aside.
