  • 1 tbsp Olive Oil (for sautéing garlic)
  • 2 cloves Garlic (freshly minced)
  • ½ cup Sun-Dried Tomatoes (chopped)
  • 1 tbsp Dried Italian Seasoning
  • Red Pepper Flakes, to taste
  • 1 cup Vegetable Broth
  • 1 can Full-Fat Coconut Milk (shaken)
  • ¼ cup Nutritional Yeast
  • 2 cups Fresh Spinach
  • Salt, to taste
  • Black Pepper, to taste
  • 1 tbsp All-Purpose Flour or Cornstarch (optional, for thickening sauce)
  • ¼ cup Fresh Basil or Parsley (chopped, for garnish)


Instructions

  1. Press Tofu: Press your tofu for at least 30 minutes to remove excess moisture, ensuring it becomes firm enough to hold shape during cooking.
  2. Slice Tofu: Slice the pressed tofu into your preferred shape, such as 1-inch cubes, for even cooking and crisping.
  3. Coat Tofu (Optional): If a crispy texture is desired, toss the tofu cubes with cornstarch, salt, and black pepper until they are lightly coated.
  4. Cook Tofu on Stovetop: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the tofu cubes and cook for 4-6 minutes per side until golden brown and crisp. Remove tofu from the skillet and set aside.
  5. Alternative Cooking for Tofu – Oven or Air Fryer: Preheat oven to 400°F (200°C) and spread the tofu cubes on a baking sheet, baking for 20-30 minutes, flipping halfway through.
