- 1 cup feta cheese, crumbled

- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper, to taste
Instructions
- Prepare Ingredients: Wash and halve the cherry tomatoes, chop the spinach, and mince the garlic to have all your ingredients ready for cooking.
- Cook Ground Chicken: Heat olive oil in a large skillet over medium heat. Add the ground chicken, season with salt, pepper, and dried oregano. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, taking care not to burn the garlic.
- Add Tomatoes and Olives: Add the halved cherry tomatoes and sliced black olives to the skillet. Cook for another 3-4 minutes to allow the tomatoes to soften slightly and flavors to meld.
- Add Spinach: Stir in the chopped spinach and cook for 2-3 minutes until the spinach is wilted and tender. Then remove the skillet from heat.
- Add Feta and Serve: Sprinkle the crumbled feta cheese over the top of the skillet. Adjust seasoning with salt, pepper, and red pepper flakes if desired. Serve warm for a delicious Mediterranean-inspired keto meal.
