Caramel Base
- 2 cups sugar

- 1 cup light corn syrup
- 1 cup half and half
- 2 cups whipping cream

- Prepare the Pan: Line an 8 x 8-inch pan with non-stick foil, making sure the foil extends over the edges for easy caramel removal once set.
- Combine Ingredients: In a large, heavy saucepan, combine the sugar, brown sugar, light corn syrup, half and half, whipping cream, and butter.
- Cook the Mixture: Cook the mixture over medium-low heat, stirring constantly to prevent burning, until the candy thermometer reaches 250ºF (the firm ball stage).
- Add Vanilla: Remove the saucepan from the heat and carefully stir in the vanilla extract to infuse a warm aroma and complement the caramel’s sweetness.
- Pour into Pan: Immediately pour the hot caramel mixture into the prepared foil-lined pan and allow it to cool completely at room temperature until firm.
- Cut and Wrap: Once cooled and set, cut the caramel into small squares and individually wrap each piece in waxed paper to prevent sticking and preserve freshness.
