Scale
Base Mixture
- 16 oz cream cheese, softened
- 1/2 cup sun-dried tomatoes
- 1/2 cup black or green olives, chopped
- 1/2 cup roasted red peppers, chopped
- 1/3 cup salami or pepperoni, chopped
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt, adjust to taste
Log Coating
- 1/4 cup chopped fresh parsley or basil
- 2 tablespoons finely chopped roasted red peppers
- 2 tablespoons finely chopped olives
- 2 tablespoons chopped nuts (optional)
Instructions
- Prepare the Mixture: In a large bowl, combine the softened cream cheese, sun-dried tomatoes, chopped olives, roasted red peppers, chopped salami or pepperoni, grated Parmesan cheese, fresh parsley, Italian seasoning, garlic powder, onion powder, red pepper flakes (if using), black pepper, and salt. Mix thoroughly until all ingredients are evenly incorporated.
- Shape the Log: Lay out a large piece of plastic wrap on a flat surface. Spoon the mixture onto the plastic wrap and carefully shape it into a log shape using your hands. Wrap it tightly to maintain the shape and prevent drying out.
- Chill the Log: Place the wrapped log in the refrigerator for at least 2 hours, or overnight if preferred, to allow the mixture to firm up and the flavors to meld.
- Coat the Log: In a small bowl, combine the chopped parsley or basil, finely chopped roasted red peppers, finely chopped olives, and chopped nuts if using. Remove the log from the plastic wrap and gently roll it in this mixture, pressing lightly to help the coating stick.
- Serve: Transfer the coated log to a serving platter. Serve with an assortment of crackers, toasted bread slices, or fresh vegetable sticks. Slice the log as needed and enjoy the flavorful antipasto appetizer.
Notes
- Make sure the cream cheese is softened at room temperature for easy mixing and a smooth texture.
- For a spicier kick, increase the amount of red pepper flakes or add a few drops of hot sauce to the mixture.
- The antipasto log can be made a day in advance and refrigerated, which enhances the flavor.
- Feel free to swap salami with pepperoni or other cured meats of your choice.
- Omit nuts if there are allergy concerns or simply prefer a nut-free version.
- Serve chilled to maintain firmness and ease of slicing.
