Ingredients
Scale
Chicken & Marinade
- 2 pounds chicken (fresh, bone-in cuts)
- 1 teaspoon salt
- 1 teaspoon freshly cracked pepper
- 1 teaspoon paprika
- 1 tablespoon curry powder
- 1 teaspoon thyme
- 1 medium onion, sautéed until sweet
Stew Components
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1/4 cup vegetable oil (or olive oil)
- 4 medium Roma tomatoes (fresh)
- 1 medium red bell pepper
- 1 medium scotch bonnet pepper (adjust for spice level)
- 2 tablespoons tomato paste
- 1 cube bouillon
- 1/4 cup fresh parsley or cilantro
- 1 medium lime (optional)
Instructions
- Marinate the Chicken: In a bowl, combine the chicken pieces with salt, freshly cracked pepper, paprika, curry powder, thyme, and the sautéed onion. Toss well to coat evenly and let it marinate for at least 30 minutes to infuse the flavors.
- Sear the Chicken: Heat vegetable oil in a skillet over medium-high heat. Add the marinated chicken pieces and sear them until browned on all sides, creating a flavorful crust. Once browned, remove the chicken from the skillet and set aside.
- Prepare the Stew Base: Blend the fresh Roma tomatoes, red bell pepper, and scotch bonnet pepper until smooth to create a fresh, vibrant sauce.
- Cook the Tomato Paste and Sauce: In the same skillet used for the chicken, fry the tomato paste for about 2 minutes to deepen its flavor. Then pour in the blended tomato and pepper mixture, stirring well. Allow this mixture to simmer gently for about 10 minutes to reduce slightly and develop taste.
- Add Spices and Chicken: Stir in garlic powder, ginger powder, and crumble the bouillon cube into the sauce. Return the seared chicken pieces to the skillet, cover, and let everything simmer for 25 to 30 minutes until the chicken is cooked through and tender.
- Finish and Garnish: Before serving, sprinkle chopped fresh parsley or cilantro over the stew for freshness. Optionally, squeeze lime juice over the stew to add a subtle zest and brighten the flavors.
Notes
- Adjust the quantity of scotch bonnet pepper based on your preferred spice level to avoid overpowering heat.
- For a richer taste, use bone-in chicken cuts as they add more flavor to the stew.
- You can substitute vegetable oil with olive oil for a healthier fat option.
- Serve the stew hot with rice, yam, or bread, traditional accompaniments that balance the bold flavors.
- Allowing the stew to simmer slowly helps meld the spices and create a deeper flavor profile.
