Description
A no-bake, easy-to-make summer dessert featuring a crunchy lotus biscuit base layered with a creamy mixture of whipped cream and cream cheese, topped with fresh strawberries and a hint of lemon juice. Perfect for effortless refreshment and indulgence without using the oven.
Ingredients
Scale
Base
- 200 g Crushed Lotus Biscuits (Biscoff cookies preferred)
- 100 g Butter (melted; can substitute with coconut oil for a vegan option)
Cream Layer
- 250 ml Whipped Cream (can substitute with Greek yogurt for a tangy twist)
- 200 g Cream Cheese (or Greek yogurt as a lighter substitute)
Fruit Layer
- 300 g Fresh Strawberries (thinly sliced; can substitute with raspberries or peaches)
- 1 tbsp Lemon Juice (to enhance the flavor of strawberries)
Instructions
- Prepare the Base: Crush the lotus biscuits in a food processor until fine crumbs form. Combine the crumbs with melted butter and stir until the mixture sticks together. Press this mixture firmly into the bottom of your serving dish to create an even and compact base layer.
- Make the Cream Layer: In a mixing bowl, whisk together the whipped cream and cream cheese until the mixture is smooth, fluffy, and well combined. For added tanginess and lighter texture, you can optionally fold in some Greek yogurt into the cream mixture.
- Assemble Layers: Spread an even layer of the cream mixture over the biscuit base. Then, layer on the thinly sliced strawberries that have been tossed with lemon juice to brighten the flavor.
- Repeat Layers: If desired, repeat the process by adding another layer of cream followed by another layer of strawberries. Finish the dessert by sprinkling some crushed lotus biscuits on top for added texture and visual appeal.
- Chill: Refrigerate the assembled dessert for 30 to 60 minutes to allow the flavors to meld together and for the dessert to set properly before serving.
Notes
- For a vegan version, substitute butter with coconut oil and use coconut whipped cream or other plant-based cream alternatives.
- Greek yogurt can be used as a healthier substitute for whipped cream and cream cheese in the cream layer.
- Strawberries can be replaced with raspberries or peaches depending on seasonal availability or preference.
- Be sure to chill the dessert adequately for the best texture and flavor fusion.
- Pressing the biscuit base firmly helps it hold shape and provides a sturdy foundation for the layers.
