For the Shrimp:

For the Pasta:
- 1 cup orzo pasta
- 1/2 cup sundried tomatoes (chopped)
- 2 1/2 cups chicken or vegetable broth
- 1/2 cup heavy cream
- 1/3 cup grated Parmesan cheese
- 1 tablespoon tomato paste
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Fresh basil for garnish
Instructions
- Prepare the Shrimp: In a large skillet or Dutch oven, heat olive oil over medium heat. Add shrimp, season with salt, pepper, paprika, and red pepper flakes. Cook for 2–3 minutes per side until just pink and opaque. Remove from pan and set aside.
- Cook the Pasta: In the same pan, add garlic and sauté for 30 seconds. Stir in orzo, sundried tomatoes, tomato paste, Italian seasoning, and broth. Bring to a boil, then reduce heat and simmer uncovered for 8–10 minutes, stirring occasionally, until orzo is al dente and most liquid is absorbed.
- Finish the Dish: Stir in heavy cream, Parmesan cheese, and spinach. Cook for 2–3 more minutes until the spinach is wilted and the sauce is creamy. Return the shrimp to the pan, toss to coat, and cook for 1–2 more minutes to reheat. Garnish with fresh basil and serve hot.
