Description

A quick and flavorful Onion Beef Fried Rice recipe combining tender marinated beef with caramelized onions, garlic, and day-old rice. This easy one-pan stir-fry is perfect for a satisfying weeknight meal, enhanced by soy and oyster sauces, scrambled eggs, and optional peas and carrots for added color and nutrition.

Ingredients

Scale

Beef Marinade

  • 1 lb (450g) beef (such as flank steak or sirloin), thinly sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil

Fried Rice

  • 2 tablespoons vegetable oil, divided
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups cooked rice (preferably day-old rice)
  • 1/2 cup frozen peas and carrots (optional)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce (for the fried rice)
  • 1 teaspoon oyster sauce (optional)
  • 1 teaspoon rice vinegar
  • 1/4 teaspoon black pepper
  • 2 green onions, chopped (for garnish)
  • Salt to taste

Instructions

  1. Marinate the Beef: In a medium bowl, combine the thinly sliced beef with 2 tablespoons soy sauce and 1 teaspoon sesame oil. Stir well and let it marinate for at least 5-10 minutes to absorb the flavors.
  2. Heat the Oil: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat, preparing it for cooking the beef.
  3. Cook the Beef: Add the marinated beef to the skillet and cook for 2-3 minutes until browned and cooked through. Remove the beef from the skillet and set aside to prevent overcooking.
  4. Prepare the Aromatics: Add the remaining 1 tablespoon of vegetable oil to the skillet. Then add the thinly sliced onion and cook for 4-5 minutes until softened and caramelized, stirring occasionally to prevent burning.
  5. Add Garlic: Stir in the minced garlic and cook for an additional 30 seconds until fragrant, releasing its aroma.
  6. Scramble the Eggs: Push the onion and garlic mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble them until fully cooked but still moist.
  7. Add Rice and Sauces: Add the cooked rice to the skillet, breaking up any clumps with your spatula. Stir to combine with the eggs, onions, and garlic. Then add 2 tablespoons soy sauce, 1 teaspoon oyster sauce (if using), 1 teaspoon rice vinegar, and 1/4 teaspoon black pepper. Mix well to evenly distribute all seasonings.
  8. Add Vegetables: If using, mix in the frozen peas and carrots. Cook for another 2-3 minutes until the vegetables are heated through and tender.
  9. Reintroduce Beef: Return the cooked beef to the skillet, stirring everything together thoroughly. Adjust seasoning with salt to taste as needed.
  10. Garnish and Serve: Remove from heat, sprinkle chopped green onions on top for freshness and crunch, then serve immediately while hot. Enjoy your delicious homemade onion beef fried rice!

Notes

  • Using day-old rice helps prevent the fried rice from becoming mushy by reducing moisture content.
  • Choose flank steak or sirloin for tender, flavorful beef slices that cook quickly.
  • Adjust the amount of soy sauce and oyster sauce to taste, especially if low sodium is preferred.
  • Feel free to add other vegetables like bell peppers or bean sprouts for variety.
  • Leftover fried rice can be refrigerated for up to 2 days and reheated in a pan or microwave.
