  • Salt and black pepper to taste

Instructions

  1. Preheat Oven: Preheat the oven to 425°F (220°C) to prepare it for roasting the potatoes and onions to a crispy, golden finish.
  2. Toss Ingredients: In a large mixing bowl, combine the potato wedges and sliced onions with olive oil, garlic powder, smoked paprika, dried thyme, salt, and black pepper. Toss thoroughly to ensure all pieces are evenly coated with the seasoning and oil.
  3. Arrange on Baking Sheet: Spread the seasoned potatoes and onions in a single layer on a baking sheet lined with parchment paper to prevent sticking and help with even roasting.
  4. Initial Roast: Place the baking sheet in the oven and roast for 25 minutes. This initial cooking softens the potatoes and starts the caramelization process on the onions.
  5. Flip & Roast Again: Using a spatula, flip the potatoes and onions to promote even cooking and browning. Return the baking sheet to the oven and roast for an additional 20 to 25 minutes, until the potatoes are golden and crispy and the onions are nicely caramelized.
  6. Garnish & Serve: Once done, optionally garnish with freshly chopped parsley to add a burst of color and fresh flavor before serving warm.

Notes

  • For extra crispiness, soak the potato wedges in cold water for 30 minutes before cooking and pat dry thoroughly.
