Crust and Assembly:
- 1 package (2 sheets) refrigerated pie crusts, thawed

Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare the filling: In a medium bowl, combine peaches, sugar, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla. Mix well and set aside.
- Prepare the crust: Roll out pie crusts on a floured surface. Cut out circles, place filling, seal, and crimp edges.
- Bake: Brush pies with egg wash, sprinkle with sugar, and bake for 20–25 minutes until golden.
- Cool and serve: Let pies cool slightly before serving.
